IT'S about time we had a gorgeous recipe from the gorgeous English Mum. So here you go:
So firstly, you can breathe a sigh of relief, because although I've definitely caught a glimpse of some sunshine recently, I'm not going to go all perky and start entreating you to dust off your barbecues just yet.
Instead, though, I'm going to entice you and your children into the kitchen with a recipe that's not only healthy and child-friendly, but fun to cook together, whether the sun is shining or not! These burgers are a bit of a favourite at English Towers. Not only are they really cheap, but they're low in fat and there are endless variations. You can make the mix into little meatballs to serve with tomato sauce, or you can vary the flavours with, say, coriander or chilli. There's also the potential for a little stealth-health here, for those of us with finicky little diners.
On to the recipe, then. You will need:
Couple of cups of breadcrumbs (I whizz up two slices of bread in the food processor, but you could buy them)
A couple of spring onions, or a small red onion, chopped
500g minced chicken or turkey
Seasoning
First, then, choose a glamorous, small assistant or two to help you in the kitchen. I had my beautiful niece Amy lying about, so I grabbed her and popped her into an apron. Place the bread into the food processor and allow your assistant to push the button (obviously reminding them about the dangers of processors/a lifetime of stumpy fingers). Remove the breadcrumbs and place them into a bowl, then pop the egg and the onion (and if you're using any herbs such as fresh parsley) and whizz. If you use spring onions or parsley, they give the burgers a strangely green glow, which all adds to the effect, I think.
Obviously, if your children are more adventurous, there's no need to whizz the onion or herbs, you can just add it in finely chopped.
Next, add the minced chicken to the breadcrumbs and add in the weirdly green egg mixture. Season with a little salt (optional) and pepper, and maybe a pinch of chilli. Squish together with clean hands and form into burger shapes, placing them on a non-stick baking tray and flattening them down to make sure they cook evenly:
Then just bake in a preheated oven at 180 degrees/gas mark 4 for about 20 minutes (check that they're cooked through.)Serve in a fresh roll with salad, and maybe some grated cheese and a little salsa.
Oh, and these are brilliant on a barbecue. Just saying…
